Description
This official Glenfarclas, a 15 year old, from 2010, cask 531, at 59.2%, 647 bottles in all. Glenfarclas is a Speyside single malt, one of the last great family owned distilleries in Scotch. Its six stills are the largest in Speyside and among the very few still fired directly, now by gas. Its water rises from the granite of Ben Rinnes, above the distillery at Ballindalloch. It has been run by six generations of the Grant family, one of Scotch whisky's last truly independent houses.
The spirit was taken gently through wash and spirit stills, for the rich, sherried make Glenfarclas is known for. It was fully matured in an Oloroso sherry cask, the wood deep in the rich spirit. At oxidative maturity aldehydes lend a nutty edge while ellagitannins draw a drying, structured grip across the fruit. The wood frames the spirit without ever stripping the full Speyside body.
At its natural 59.2% it is rich and chewy. A rich, sherried sweetness, with dried fruit, fig and walnut from the cask. Beneath it run dried fruit, dark sugar and a warm spice. A deep finish ends on dried fruit and a dark chocolate. This is a deep, sherried Speyside single malt.
