Description
A 15 year old Glenfarclas, a distillery bottling, from 2000, at 46%, 9000 bottles in all. Glenfarclas is a Speyside single malt drawn from the largest, direct fired stills in Speyside. It launched the 105 in 1968, one of the first cask strength single malts sold to the public.
It was distilled in copper pot stills, giving a deep, full bodied Speyside spirit. It was fully matured in an Oloroso sherry cask, the wood deep in the rich spirit. Through oxidative maturity the esters concentrate, the orchard notes turning to raisin, fig and a dark chocolate. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate. Active wood drives the maturation, the cask deep in the malt. The full spirit deepens with time, the cask drawing out its darker register. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time.
Reduced to 46%, it is mellow and sweet. A rich orchard sweetness and dark sugar, with dried fruit, fig and walnut from the cask. It is full and fruity, the spirit carrying the cask. Dried fruit, spice and a soft oak see it out. This is the family sherry malt of Ballindalloch.
