    An official Glenfarclas, a 13 year old, 1995, at 46%. Raisin, chocolate and a warm spice run through it, with dried fruit, fig and walnut from the cask. It holds tens of thousands of casks on site, with stock from every year since 1953. Matured almost wholly in Oloroso sherry casks from Jerez. This is the family sherry malt of Ballindalloch.

    A 13 year old Glenfarclas, a distillery bottling, from 1995, cask see note, at 46%, 3600 bottles in all. Glenfarclas is a Speyside single malt, one of the last great family owned distilleries in Scotch. It was licensed in 1836 under Robert Hay and bought in 1865 by John Grant for 511 pounds.

    The spirit was distilled to a rich, generous cut, for a weighty, nutty spirit the sherry then deepens. Maturation came in an Oloroso sherry cask, layered over the full Glenfarclas make. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. The full bodied spirit takes active sherry wood well, carrying its dark sugars through the years. Maturation runs slow and even in the dunnage warehouses at Ballindalloch. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time.

    Bottled at 46%, it is rounded and full. Baked apple, honey and a dark chocolate, with dried fruit, fig and walnut from the cask. The mouthfeel is full and coating, the fruit dark and sweet. It finishes long, full and fruity. This is a deep, sherried Speyside single malt.
