    A 27 year old Glenfarclas from the distillery, at 46%. A rich, sherried malt of date, fig and a warm cinnamon, with dried fruit, fig and walnut from the cask. Run by six generations of the Grant family since 1865, one of Scotch’s last independents. Bottled at natural colour, without chill filtration. This is a deep, sherried Speyside single malt.

    Glenfarclas from the distillery, a 27 year old, from 1990, cask 1195, 9472,9520-9527, at 46%, 3000 bottles in all. Glenfarclas is a Speyside single malt from Ballindalloch, in the heart of Speyside. It launched the 105 in 1968, one of the first cask strength single malts sold to the public.

    The spirit was distilled in copper pot stills, shaping a rich Speyside body with real weight. An Oloroso sherry cask held it, drawing the rich spirit on over the years. Through the evaporative decades the esters fold into raisin, fig, beeswax and a bittersweet chocolate. The wood frames the spirit without ever stripping the full Speyside body. The cool, slow dunnage ageing loses little to evaporation, the spirit holding its depth. The full bodied spirit takes active sherry wood well, carrying its dark sugars through the years. Maturation runs slow and even in the dunnage warehouses at Ballindalloch.

    At 46% it is smooth and rich. Baked apple, honey and a dark chocolate, with dried fruit, fig and walnut from the cask. Fig, honey and a dark chocolate fill the middle. Dried fruit, spice and a soft oak see it out. This is a full bodied Speyside single malt of real richness.
