Description
This official Glenfarclas, a 20 year old, from 1990, cask 9589, at 56.8%, a festival cask. Glenfarclas is a Speyside single malt, the house behind the pioneering 105 cask strength. Its water rises from the granite of Ben Rinnes, above the distillery at Ballindalloch. Its whiskies are bottled at their natural colour, without chill filtration.
Worked unhurried through the stillhouse, shaping a rich Speyside body with real weight. It was matured in refill ex-Bourbon oak, a soft vanilla beneath the fruit. Through oxidative maturity the esters concentrate, the orchard notes turning to raisin, fig and a dark chocolate. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time. The full bodied spirit takes active sherry wood well, carrying its dark sugars through the years. Maturation runs slow and even in the dunnage warehouses at Ballindalloch.
At a natural 56.8% it is full and rich. A rich orchard sweetness and dark sugar, lifted by a sweet oak. A baked apple and a warm cinnamon lift the middle. The finish is rounded, dark and spiced. This is a Speyside single malt of real standing.
