Description
Glenfarclas from the distillery, at 43%, 6000 bottles in all. Glenfarclas is a Speyside single malt, one of the last great family owned distilleries in Scotch. Its spirit is matured almost wholly in sherry butts brought up from Jerez. Its whiskies are bottled at their natural colour, without chill filtration. Its six stills are the largest in Speyside and among the very few still fired directly, now by gas.
The spirit was taken gently through wash and spirit stills, building a deep malt of dried fruit and dark sugar. Ex-Bourbon casks held it, the American oak lending vanilla and a light honey. With no age statement, vanillin reads as vanilla and oak lactones as coconut over the rich, fruity spirit. The cool, slow dunnage ageing loses little to evaporation, the spirit holding its depth. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate.
At 43% it is rich, fruity and deep. Raisin, chocolate and a warm spice, lifted by a sweet oak. The body is full and rich, the fruit deep and dark. A long finish carries raisin, chocolate and a treacle. This is the family sherry malt of Ballindalloch.
