    An official Glenfarclas, at 43%. Orange, raisin and a treacle edge. It holds tens of thousands of casks on site, with stock from every year since 1953. Drawn from the largest, direct fired stills in Speyside, for a nutty depth. Licensed in 1836 and bought by John Grant in 1865, at Ballindalloch. This is the family sherry malt of Ballindalloch.

    This official Glenfarclas, at 43%, 6000 bottles in all. Glenfarclas is a Speyside single malt matured almost wholly in sherry casks from Jerez. It was licensed in 1836 under Robert Hay and bought in 1865 by John Grant for 511 pounds. Its slow, cool dunnage maturation loses very little to the angels each year. It has been run by six generations of the Grant family, one of Scotch whisky's last truly independent houses.

    Worked unhurried through the stillhouse, for a weighty, nutty spirit the sherry then deepens. Maturation came in ex-Bourbon wood, the oak gentle behind the spirit. Without an age statement, a dark sugar and dried fruit point to good years in cask. The full spirit deepens with time, the cask drawing out its darker register. The full bodied spirit takes active sherry wood well, carrying its dark sugars through the years. Maturation runs slow and even in the dunnage warehouses at Ballindalloch.

    Reduced to 43%, it is mellow and sweet. Baked apple, honey and a dark chocolate, lifted by a sweet oak. Beneath it run dried fruit, dark sugar and a warm spice. A deep finish ends on dried fruit and a dark chocolate. This is a full bodied Speyside single malt of real richness.
