Edradour Pedro Ximenez Sherry Cask Matured 12 Years Old 2011

An official release of Edradour, a 12 year old, from 2011, cask 91, at 56.9%, 323 bottles in all. Edradour is a rich Highland malt from the pocket glen at Balnauld, distilled since 1825. Its tiny copper stills and worm tubs give a rich, oily, full bodied spirit.

It was distilled from unpeated malt in tiny copper stills and worm tubs, for a rich, nutty spirit with a waxy depth. Finished in a Pedro Ximenez cask, the wood building over the oily, full bodied spirit. By the integrating teens congeners fade and esters build, the rich, oily spirit growing creamier. A gentle maturation suits the oily make, the nutty richness growing with time. Vanillin and oak lactones from the wood lend vanilla and coconut over the fruit. A 2018 expansion added a second still house, the production still small and traditional. The distillery sits in a pocket glen at Balnauld, in the hills above Pitlochry in Perthshire.

At cask strength 56.9% it is big and oily. A full, fruity sweetness, with raisin, date and treacle from the cask. A dried fruit and a polished oak give it depth. It finishes long, rich and oily. This is the oily, rich malt of tiny Edradour.
