Description
This official Edradour, a 15 year old, from 2010, at 57.7%. Edradour is a small, traditional Highland single malt, owned by Signatory since 2002. A rare Morton refrigerator still cools the wort, one of the last in use in Scotland.
It was made in the smallest of stills and condensed in worm tubs, the worm tubs lending a weighty, oily character. It rested in ex-Bourbon oak, oak lactones lending vanilla and a little coconut. At oxidative maturity vanillin and lactones are fully expressed, the nutty, oily malt deepening. The cool Highland air of the glen gives a slow, even maturation in the small Edradour warehouses. A small distillery and a hands on approach shape every cask by hand. Maturation in the dunnage warehouses at Pitlochry is slow and steady. Long ageing turns the rich make towards dried fruit, fig and a soft spice. The full bodied spirit shows the cask clearly, the sherry and oak to the fore.
Bottled at a cask strength 57.7%, it is rich. Dried fruit, nut and a soft chocolate, with a soft vanilla from the oak. It is rich and oily, the full bodied spirit shining through. The finish runs long, nutty and warming. This is Edradour's full bodied, sherried Highland style.
