Edradour Pawis Spätburgunder Cask Finish 11 Years Old 2010

An official release of Edradour, an 11 year old, from 2010, cask 2, at 56.2%, 299 bottles in all. Edradour is a creamy, sherried Highland single malt from one of the smallest distilleries in Scotland. It was bought in 2002 by Andrew Symington of the independent bottler Signatory Vintage.

The spirit was made in the smallest of stills and condensed in worm tubs, the worm tubs lending a weighty, oily character. It was matured in a Pinot Noir cask, the wood working slowly into the rich malt. Integration folds eugenol (clove) and vanillin (vanilla) into the oily malt, the body fuller and creamier. Active wood frames the rich fruit without overwhelming the oily Highland spirit. Years in oak round the spirit, the dried fruit and chocolate deepening over the oily core. A small distillery and a hands on approach shape every cask by hand.

Bottled at a cask strength 56.2%, it is rich. Dried fruit, nut and a soft chocolate, with a light red berry and a dry edge from the cask. The mouthfeel is thick and oily, the fruit on a creamy body. Dried fruit, chocolate and a soft oak see out a long finish. This is the little gem of the Highlands at Pitlochry.
