Edradour Single Cask #2 14 Years Old 2008 (French Oak)

An official release of Edradour, a 14 year old, from 2008, cask 2, at 56%, 299 bottles in all. Edradour is a small, traditional Highland single malt, owned by Signatory since 2002. Under Signatory the range has grown to a wide run of sherry and wine cask bottlings.

It was drawn off the tiny stills and cooled in worm tubs for an oily make, building the creamy Edradour style. Maturation came in a French Oak cask, layered over the rich Edradour make. By the integrating teens congeners fade and esters build, the rich, oily spirit growing creamier. The tiny stills and worm tubs give an oily spirit that takes the cask well. A gentle maturation suits the oily make, the nutty richness growing with time. Years in oak round the spirit, the dried fruit and chocolate deepening over the oily core. Signatory's wide cask range gives the small distillery an unusual variety of finishes.

At a natural 56% it is full and oily. Dried fruit, nut and a soft chocolate, with a spiced, tannic edge from the cask. Soft chocolate and a nutty oil sit behind the cask. The finish is rounded, fruity and gently spiced. This is the little gem of the Highlands at Pitlochry.
