Edradour Single Cask #602 14 Years Old 2007 (Ex-Bourbon)

Edradour from the distillery, a 14 year old, from 2007, cask 602, at 46%, 403 bottles in all. Edradour is a creamy, sherried Highland single malt from one of the smallest distilleries in Scotland. A 2018 expansion added a second still house, the production still small and traditional.

It was distilled slowly in the old farm stillhouse on Ben Vrackie water, for a full, oily make of dried fruit and chocolate. First fill bourbon gave a fuller vanilla and a touch of coconut from the lactones. Integration folds eugenol (clove) and vanillin (vanilla) into the oily malt, the body fuller and creamier. Refill oak lets the rich, oily Edradour character lead the way. For years its sign read Scotland's smallest distillery; it now calls itself Scotland's little gem. It once supplied blends such as House of Lords and King's Ransom. Signatory's wide cask range gives the small distillery an unusual variety of finishes.

Reduced to 46%, it is mellow. Baked apple, marzipan and a creamy malt, with a soft vanilla from the oak. Beneath it run dried fruit, chocolate and a soft oil. The finish is long, oily and gently spiced. This is a creamy, nutty Highland single malt.
