Edradour Natural Cask Strength 14 Years Old 2004

An official release of Edradour, a 14 year old, from 2004, cask 438, at 56.9%, 683 bottles in all. Edradour is a rich, oily Highland single malt made in the old farm buildings above Pitlochry. It keeps the old ways, with an open cast iron mash tun, Oregon pine washbacks and worm tub condensers.

Drawn off the tiny stills and cooled in worm tubs for an oily make, the worm tubs lending a weighty, oily character. An Oloroso cask held it, shaping the oily spirit over the years. Integration folds eugenol (clove) and vanillin (vanilla) into the oily malt, the body fuller and creamier. A small distillery and a hands on approach shape every cask by hand. Its water comes from the Ben Vrackie springs in the hills above the distillery. A 2018 expansion added a second still house, the production still small and traditional. Signatory's wide cask range gives the small distillery an unusual variety of finishes.

At its natural 56.9% it is rich and full bodied. Baked apple, marzipan and a creamy malt, with dried fruit, fig and walnut from the cask. Beneath it run dried fruit, chocolate and a soft oil. Dried fruit, chocolate and a soft oak see out a long finish. This is the oily, rich malt of tiny Edradour.
