Description

An official release of Edradour, a 12 year old, from 2004, cask 365, at 53.5%, 397 bottles in all. Edradour is a rich, oily Highland single malt made in the old farm buildings above Pitlochry. It was founded in 1825, growing out of an old farmers' cooperative in the glen above Pitlochry.

It was worked through Oregon pine washbacks and tiny stills for a rich, oily spirit, for a full, oily make of dried fruit and chocolate. Finished in a Sauternes cask, the wood building over the oily, full bodied spirit. In integration lactones (coconut) and vanillin (vanilla) knit with the malt, the nutty chocolate deepening. Vanillin and oak lactones from the wood lend vanilla and coconut over the fruit. Ben Vrackie water and a long ferment give the rich Edradour make. It was bought in 2002 by Andrew Symington of the independent bottler Signatory Vintage. The tiny stills and worm tubs give an oily spirit that takes the cask well.

At a hearty 53.5% it carries real weight. A rich, nutty sweetness, with honeyed apricot and a candied citrus from the cask. A baked apple and a gentle spice lift it. The finish runs long, nutty and warming. This is a creamy, nutty Highland single malt.
