A 21 year old Edradour from the distillery, at 52.1%. Fig, dried fruit and a soft chocolate fill the glass, with dried fruit, fig and walnut from the cask. Water comes from the Ben Vrackie springs above the distillery. Its tiny stills and worm tubs give a rich, oily, full bodied spirit. This is a rich, oily Highland single malt.

Description
An official release of Edradour, a 21 year old, from 2001, cask 2413, 2414 and 2504, at 52.1%, 1919 bottles in all. Edradour is a Highland single malt distilled in a pocket glen near Pitlochry since 1825. The distillery sits in a pocket glen at Balnauld, in the hills above Pitlochry in Perthshire.
Drawn off the tiny stills and cooled in worm tubs for an oily make, the worm tubs lending a weighty, oily character. Maturation came in an Oloroso cask, layered over the rich Edradour make. At oxidative maturity aldehydes lend a nutty edge while ellagitannins add a gentle, drying grip over the oily malt. A gentle maturation suits the oily make, the nutty richness growing with time. Signatory's wide cask range gives the small distillery an unusual variety of finishes. A rare Morton refrigerator still cools the wort, one of the last in use in Scotland.
At a natural 52.1% it is full and oily. Chocolate, dried fruit and a waxy oil, with dried fruit, fig and walnut from the cask. It is rich and oily, the full bodied spirit shining through. The finish runs long, nutty and warming. This is a Highland single malt of real character.
