Description
An official release of Edradour, a 21 year old, from 2000, cask 3152 + 3157, at 56.5%, 1308 bottles in all. Edradour is a small, traditional Highland single malt, owned by Signatory since 2002. It keeps the old ways, with an open cast iron mash tun, Oregon pine washbacks and worm tub condensers.
Worked through Oregon pine washbacks and tiny stills for a rich, oily spirit, the worm tubs lending a weighty, oily character. An Oloroso cask held it, shaping the oily spirit over the years. At oxidative maturity aldehydes lend a nutty edge while ellagitannins add a gentle, drying grip over the oily malt. Maturation in the dunnage warehouses at Pitlochry is slow and steady. Refill oak lets the rich, oily Edradour character lead the way. Its water comes from the Ben Vrackie springs in the hills above the distillery. The worm tubs leave an oily weight that carries through the years in cask.
At a hearty 56.5% it carries real weight. Dried fruit, nut and a soft chocolate, with dried fruit, fig and walnut from the cask. Fig, nut and a creamy malt fill the middle. Dried fruit, chocolate and a soft oak see out a long finish. This is a rich, oily Highland single malt.
