Edradour 200th Anniversary – Sherry Casks Batch No. 1 30 Years Old 1995

This official Edradour, a 30 year old, from 1995, cask 2101 + 2109, at 56.3%, 1287 bottles in all. Edradour is a Highland single malt from the tiny farm distillery at Pitlochry, long called Scotland's smallest. It is one of the smallest traditional distilleries in Scotland, long run by just two or three hands.

Distilled slowly in the old farm stillhouse on Ben Vrackie water, giving the full bodied, creamy Highland spirit. Maturation came in an Oloroso cask, layered over the rich Edradour make. Ethereal and fragile, decades draw the oily malt to a honeyed, nutty delicacy of sotolon and old oak. Active wood frames the rich fruit without overwhelming the oily Highland spirit. Vanillin and oak lactones from the wood lend vanilla and coconut over the fruit. It was bought in 2002 by Andrew Symington of the independent bottler Signatory Vintage. The distillery sits in a pocket glen at Balnauld, in the hills above Pitlochry in Perthshire.

At a natural 56.3% it is full and oily. A full, fruity sweetness, with dried fruit, fig and walnut from the cask. Fig, nut and a creamy malt fill the middle. The finish runs long, nutty and warming. This is a creamy, nutty Highland single malt.
