Edradour Straight From The Cask – Chardonnay Finish 10 Years Old 1993

A 10 year old Edradour, a distillery bottling, from 1993, cask 04/12/1, at 56.6%, 430 bottles in all. Edradour is a Highland single malt from Perthshire, traditional and tiny, now Scotland's little gem. Its tiny copper stills and worm tubs give a rich, oily, full bodied spirit.

The spirit was distilled slowly in the old farm stillhouse on Ben Vrackie water, the worm tubs lending a weighty, oily character. First fill bourbon gave a fuller vanilla and a touch of coconut from the lactones. Integration folds eugenol (clove) and vanillin (vanilla) into the oily malt, the body fuller and creamier. Ben Vrackie water and a long ferment give the rich Edradour make. It is one of the smallest traditional distilleries in Scotland, long run by just two or three hands. A small distillery and a hands on approach shape every cask by hand. A rare Morton refrigerator still cools the wort, one of the last in use in Scotland.

At a natural 56.6% it is full and oily. Baked apple, marzipan and a creamy malt, with a soft vanilla from the oak. A baked apple and a gentle spice lift it. It finishes long, rich and oily. This is the little gem of the Highlands at Pitlochry.
