Description
A 15 year old Edradour, a distillery bottling, from 1989, cask 359, at 56.7%, 525 bottles in all. Edradour is a creamy, sherried Highland single malt from one of the smallest distilleries in Scotland. It was bought in 2002 by Andrew Symington of the independent bottler Signatory Vintage.
Drawn off the tiny stills and cooled in worm tubs for an oily make, building the creamy Edradour style. An ex-Bourbon barrel shaped it, vanillin lending vanilla under the fruit. Through oxidative maturity esters concentrate, the dried fruit and chocolate turning rich over the waxy body. The worm tubs leave an oily weight that carries through the years in cask. Vanillin and oak lactones from the wood lend vanilla and coconut over the fruit. Active wood frames the rich fruit without overwhelming the oily Highland spirit. It is one of the smallest traditional distilleries in Scotland, long run by just two or three hands.
At a natural 56.7% it is full and oily. Chocolate, dried fruit and a waxy oil, with a soft vanilla from the oak. Soft chocolate and a nutty oil sit behind the cask. It finishes long, rich and oily. This is the oily, rich malt of tiny Edradour.
