Description
A 12 year old Ballechin, a distillery bottling, from 2010, cask 214 + 219, at 53%, 703 bottles in all. Ballechin is the peated expression of Edradour, named after a long lost peated farm distillery nearby. Ballechin was first distilled in 2003, the malt peated to around fifty parts per million.
Worked through worm tubs from heavily peated malt for a smoky, oily spirit, for the smoky, oily Ballechin make. Ex-Bourbon casks held it, the gentle American oak letting the oily make lead. Integration folds eugenol (clove) and vanillin (vanilla) into the smoky malt, the body fuller and oilier. The tiny stills and worm tubs give an oily spirit that takes the cask well. It was founded in 1825, growing out of an old farmers' cooperative in the glen above Pitlochry. The distillery sits in a pocket glen at Balnauld, in the hills above Pitlochry in Perthshire. Under Signatory the range has grown to a wide run of sherry and wine cask bottlings.
At its natural 53% it is rich and full bodied. Peat, chocolate and a waxy oil, with a soft vanilla from the oak. A baked apple and a peppery smoke lift it. A long, smoky finish carries dried fruit and a soft ash. This is the smoky side of tiny Edradour.
