This official Ballechin, a 15 year old, cask Batch 1, at 59.4%, 3126 bottles in all. Ballechin is a rich, smoky Highland single malt from the tiny Edradour distillery. A rare Morton refrigerator still cools the wort, one of the last in use in Scotland.
Worked through worm tubs from heavily peated malt for a smoky, oily spirit, for a heavy, smoky spirit with an oily depth. Finished in an Oloroso cask, the wood building over the oily, full bodied spirit. Into oxidative maturity, slow air ingress builds fruity esters and a tarry depth, the smoke turning to soft ash and dried fruit. The cool Highland air of the glen gives a slow, even maturation in the small Edradour warehouses. A gentle maturation suits the oily make, the nutty richness growing with time. Ben Vrackie water and a long ferment give the rich Edradour make.
Bottled at a cask strength 59.4%, it is rich. Soft ash, dried fruit and a creamy malt, with dried fruit, fig and walnut from the cask. The mouthfeel is thick and oily, the smoke on a creamy body. The close is oily and smoky, fruit over a tarry oak. This is a heavily peated Highland malt from Pitlochry.
