    Chapter 7 (Ch7) bottled this Tormore single malt matured to 19 year old from 1995, drawn from cask 20159 and bottled at 55.7%. The outturn was 209 bottles. Tormore was built in the late 1950s near Grantown-on-Spey in Speyside; it is one of the most striking distilleries in Scotland. Purifiers on the spirit stills keep the spirit light and clean.

    It was worked through swan neck stills with purifiers, for the light, clean, nutty make Tormore is known for. An ex-Bourbon barrel shaped it, gentle American oak beneath the fruit. Mid age brings a deeper honey and a riper, nuttier fruit. The slow loss of the angel's share concentrates the nutty, citrussy core over time. Most of the spirit matures off site, much of it in refill ex-Bourbon wood. The distillery sits near Grantown-on-Spey, in sight of the Cromdale Hills. Tormore is cleaner than the waxy Clynelish, with more weight than the lightest Speysiders.

    At its natural 55.7% it is concentrated. Melon, nut and a grassy note sit alongside a quiet vanilla from the refill oak. It is clean and structured, the nutty spirit shining through. Green apple and almond draw out the close. This is Tormore's clean, nutty Speyside style.
