Description
This Lindores Abbey single malt, bottled at 49.4%. Lindores Abbey Distillery sits at Newburgh in Fife, on the site where the first written record of Scotch whisky was made in 1494. Barley is grown on the abbey land and water drawn from a borehole on site, with the whisky bottled at the distillery.
The spirit was run through copper pot stills fed by water from the abbey land, to build a textured, fruity character. Maturation in a sherry cask laid dried fruit over the fruit. The STR red wine casks of Jim Swan's design work fast on a young spirit, giving real depth in a few years. Lindores also makes Aqua Vitae, a botanical spirit after the medieval water of life. The whisky is bottled on site at Newburgh to keep transport low. A young distillery, it leans on active casks to bring its whisky to life quickly. The house style is layered and fruity, richer than a typical light Lowland. The Casks of Lindores range shows the spirit in bourbon, sherry and STR red wine wood.
At 49.4%, undiluted, it is rich and layered. The Oloroso brings dried fruit, fig and a nutty depth. Soft orchard fruit and toffee sit behind the cask. It finishes rich, fruity and full. This is the modern malt of the 1494 abbey.
