Description
A 14 year old single cask Ardmore released by the Scotch Malt Whisky Society as cask 66.220, distilled in 2007 and matured exclusively in a single Pedro Ximenez sherry cask. Unlike the more common finishing treatment, this release saw full term PX maturation rather than a Bourbon base with a sherry top up, an unusual configuration for steam era Ardmore that produces a much more sherry dominant character. The 2007 vintage falls in the same year that Beam Global launched the official Ardmore Traditional Cask. 269 bottles for the European market at 60.3% natural strength.
Filled at 63.5% into a single PX seasoned cask in 2007, the spirit matured in dunnage at Kennethmont under the post 2001 steam heating regime. Fourteen years brought the cask only marginally below fill strength, holding at 60.3% with no chill filtration applied at bottling.
Full term PX maturation drives intense sherry character. Glycerol and residual grape sugars give raisin, fig and date paste depth at concentrated intensity. Polyphenol oxidation builds rancio character, with melanoidins from the seasoning reading as dark caramelised fruit and walnut. Eugenol and vanillin from the seasoned oak give clove and warm baking spice. Steam era distillate lacks the coal era Maillard register, leaving the 12 to 14 ppm peat phenols folded into the wood derived intensity as dry leaf and a peat hearth note rather than dominant smoke.
