Aberfeldy Hand Bottled at the Distillery 25 Years Old 1999

Distilled at Aberfeldy in 1999 and matured 25 years in a single ex Bourbon cask numbered 21998, bottled at the distillery in 2024 at 53.7% under the Hand Bottled at the Distillery programme. The longest matured cask from the 1999 vintage parcel held back for the visitor centre hand fill series, drawn from the distillery's main cask register rather than the smaller visitor programme numbering. 25 year cask strength Aberfeldy from a single cask is unusual outside of indie releases, making this a rare proposition through the distillery's direct channel.

Long fermentation Aberfeldy wash from the four still post expansion configuration, distilled in 1999 in the first year of John Dewar & Sons (Bacardi) ownership. Filled into a single ex Bourbon cask and aged 25 years at the distillery's warehouses. Bottled on site at 53.7% with no chill filtering and no caramel adjustment, with the bottling strength reflecting natural strength after a quarter century of slow evaporation.

Twenty five years in refill American oak runs the wood extraction close to its peak: vanillin from lignin breakdown sits at upper concentration, cis whisky lactones contribute pronounced coconut and dill, and furfural plus 5 hydroxymethylfurfural from hemicellulose provide developed caramel and pastry. Aberfeldy's distillate signature carries through more than two decades of slow oxidation: ethyl laurate, ethyl myristate and heavier alcohols drive the heather honey core, with polymerised polyphenols, ellagic acid and acetal compounds layering soft leather, tobacco and aged Cognac onto the honey base.
