Description
IN2Spirit is a Belgian independent bottler operating a numbered release programme rather than a themed series structure, with each release identified sequentially. This Glenrothes 2011 was filled to a single Oloroso butt, designated cask 4788, and bottled in 2023 at 50.3% for the firm's Release 15. The 90 bottle outturn was directed into the Belgian market, with the small volume suggesting a hogshead format and notable angel's share evaporation.
Twelve years in an Oloroso butt sits in the productive middle window for sherry maturation: long enough for the cask's residual sherry residue to penetrate fully, short enough that European oak tannin has not yet overwhelmed the spirit. The slightly softened 50.3% strength suggests the cask sat in higher humidity warehousing, favouring alcohol over water evaporation. Lignin's slow breakdown delivers vanillin, syringaldehyde and eugenol while the residual Oloroso sherry contributes oxidised glucose and aldehyde chemistry to the spirit.
The nose carries date and fig with polished oak underneath, the cask's residual sherry signature clearly developed. The palate moves through raisin syrup, chocolate orange and a savoury walnut depth, with 50.3% strength giving the cask weight without astringency. The finish runs long and gently tannic, the European oak's grip framing the residual sweetness without overwhelming the spirit's Speyside fruit.
