Description
Waterford 2019, known formally as Heritage Hunter 1.1, is part of Waterford's Arcadian Series celebrating historic barley varieties and alternative farming philosophies. The whisky takes its name from Dr Herbert Hunter, the pioneering Irish plant breeder who developed the Hunter barley variety, now rare in commercial use. Waterford distilled the 2019 vintage from Hunter barley to explore how heritage strains express differently in the final spirit compared to modern high yield varieties, which began replacing traditional strains in the 1970s. An outturn of 9,048 bottles was released. Every bottle carries the TÉIREOIR code linking to the full farm and cask records behind the whisky.
Maturation ran three years in three cask types: 45% first fill American oak, 19% virgin American oak and 21% premium French oak. First fill Bourbon contributes vanillin and coconut lactones through the charred inner wood. Virgin American oak adds toasted sugar and raw lignin derived spice. French oak delivers finer grained tannins with clove phenolics. The tighter cask profile without Vin Doux Naturel keeps the grain character forward. Bottled at 50% without chill filtration or added colour.
On the nose, earth, dry soil, lemon sherbet and red apple. The palate carries the distinctive character of a near extinct barley variety, offering a taste of how Irish whisky would have expressed before modern breeding programmes dominated the industry.
