Distilled on 27 June 2001 and bottled in 2020, this 19 year old single malt from Bushmills was finished in a feuillette cask and released at 49.0 percent ABV as part of The Causeway Collection, with a very limited outturn of only 168 bottles designated for The Whisky Shop in the United Kingdom.

After nearly two decades in wood, the spirit has undergone extensive chemical transformation. Over long periods of cask contact, slow oxygen ingress facilitates oxidation and esterification reactions, converting early, sharper alcohols and acids into larger, more stable molecules. This process naturally dims highly volatile, fermentation-derived notes and pushes the profile toward denser, integrated aromatics that show continuity from nose through finish.

The finishing period in a feuillette cask is distinctive. A feuillette is a type of Burgundy barrel with a higher surface area to volume ratio and tight grain, which promotes a focused interaction between spirit and wood. Unlike larger butts or hogsheads, a feuillette’s geometry enhances extraction of oak compounds like vanillin and tannins without overwhelming the base spirit, particularly in more mature stock. Because this whiskey had already spent most of its life in traditional American and European oak before spending further time in a feuillette, the finishing wood adds structured spice and a more concentrated grain-derived sweetness rather than raw wood flavour.

On the nose, this release shows rich dried fruit and gentle spice supported by warm oak influence and a subtle underlying sweetness. The palate is rounded and layered, with fruit weight and light cocoa or dark chocolate character balanced by oak-derived notes of honeyed vanilla and gentle baking spice. The finish carries these elements steadily, with persistent but controlled wood influence that does not overwhelm the mature spirit.
