Distilled on 11 June 2002 and bottled on 17 July 2023, this 21 year old single malt from Bushmills was matured in oloroso sherry and ex-bourbon barrels before spending additional time in vermouth casks as part of its finishing regime. Released at 50.7 percent ABV with a limited outturn of around 2,545 bottles, this bottling was made exclusively for the German market.
Over more than twenty years in wood, the spirit has undergone extensive chemical evolution. Oxygen slowly enters through the cask staves over time, softening harsher alcohols and breaking them down into larger, more stable molecules through oxidation and esterification reactions. This process gradually depletes high-volatility compounds associated with young spirit and shifts the profile toward deeper, layered aromatics that show more continuity between nose, palate and finish.
The layered cask strategy here also plays a defining role in how the whiskey presents. Oloroso sherry casks contribute rich, darker dried fruit and oxidative notes, while ex-bourbon barrels add structural vanilla sweetness and light baked fruit character. The final vermouth cask influence introduces subtle herbal and spice complexity on top of those foundations. Vermouth itself is a fortified wine that is aromatized with botanicals, leaving behind compounds in the wood that interact with mature spirit to add nuance without overt freshness or simple sweetness. Over years in contact with spirit, these residues dissolve and integrate, reinforcing depth and layered fruit spice.
On the nose, this release shows an inviting combination of rich dried fruit, honeyed sweetness and gentle spice with underlying hints of citrus peel and light herbal notes that reflect vermouth maturation. The palate is structured and full, with a combination of dried fruit, toasted oak, subtle vanilla and warming spice, carried by a balanced alcohol presence that supports flavour without harsh heat. The finish is sustained and smooth, with lingering fruit and spice weaving together in a way that feels cohesive and mature rather than fragmented.
