Description
Gaia 2.1 is the third release in Waterford's certified organic Arcadian Series, drawing on the distillery's second organic barley harvest from 2017. Certified by the Organic Trust, the whisky is produced from organic Irish barley grown across six farms. An outturn of 30,000 bottles was released globally. Every bottle carries the TÉIREOIR code that links to the full farm and cask records behind the spirit. The Arcadian Series exists to showcase barley grown under alternative farming philosophies including organic, biodynamic and heritage grain varieties.
Maturation ran four years across four cask types: 39% first fill American oak, 17% virgin American oak, 19% ex-Bordeaux and 25% Vin Doux Naturel. First fill Bourbon delivers vanillin and coconut lactones through the charred inner wood. Virgin American oak carries higher concentrations of raw lignin and hemicellulose for toasted sugar and sharper spice. The ex-Bordeaux component contributes anthocyanins and condensed tannins from the original red wine, pushing the spirit toward dried fruit and clove. Vin Doux Naturel casks, previously holding fortified sweet wines from southern France, add oxidised fruit esters and concentrated sweetness. Bottled at 50% without chill filtration or added colour.
On the nose, orange peel, fresh earth, bread crust and brown sugar. The palate brings white pepper, grapefruit, liquorice and cocoa, finishing on drying spice.
