Description
Velier bottled this Foursquare from the 2003 vintage as the Destino, honouring distiller Richard Seale, drawing on his St Philip distillery in Barbados. Unsweetened and at 61%, it shows how far the dry Foursquare style can be pushed when taken in a Madeira direction, a cask-strength single blend with no added sugar, colour or flavouring.
The classic pot-and-column spirit was matured with Madeira influence, which concentrates the fruit into dense dried fruit alongside coconut, vanilla and dark chocolate. The nose layers dried fruit, vanilla and spice over wood, the palate is rich and chewy with caramel and oak, and the finish turns spicy, toasted and dry. At full strength it rewards slow sipping and a little water, landing as a drier, fruit-forward benchmark of mature Barbados rum for those who already love the house and want to see it stretched.
