Allt Gleann is the second release in Torabhaig's Legacy Series, the run of bottlings tracing the distillery's progress towards a ten year old single malt. Torabhaig opened in 2017 as only the second distillery on the Isle of Skye, built by Mossburn Distillers in a restored farmstead at Teangue. Allt Gleann takes its name from one of the two island burns that supply the distillery's water. Each release in the series is crafted by a single member of the distillery team, who chooses the barley, yeast, peating and casks.
For this release the team tweaked the recipe, adding Laureate barley to the Concerto strain of the first year and adjusting the yeast, drawing on heavily peated malt. It was matured around eighty percent in first fill Bourbon barrels and twenty percent in refill whisky casks, and bottled at 46 percent without chill filtration or colour.
On the palate it shows a fuller phenolic peat than the inaugural release, salty sea notes and a coastal smoke over lemon and vanilla, with white chocolate and a hint of burnt marshmallow on the finish. The smoke is firm but well tempered, the sea breeze of Skye running through it. The whisky that established Torabhaig's signature style.
