Ripe strawberry and bright citrus play against a backbone of London Dry juniper, sweet but never cloying. A fruit-forward riff on King of Soho’s classic, named for the variety of flavours it gathers, it pours a delicate rosé and finishes with a fine, dry edge. Summer in a glass with proper structure.
Description
The King of Soho takes its name and its swagger from London's most colourful neighbourhood, and West End Drinks built this Variorum edition as a playful turn on their classic London Dry. The base is a traditional botanical blend, juniper, coriander, citrus peel and angelica root, then strawberry is folded in to give it fruit and colour. "Variorum" nods to the variety of flavours it pulls together; despite the sweetness, it holds onto its dry gin spine.
It pours a delicate rosé. The nose is fresh strawberry over juniper, citrus and a herbal hint. The palate is soft and fruity, sweet strawberry meeting spicy juniper and a subtle citrus freshness, while the finish stays smooth and elegant with a fine, balancing dryness. Serve it long over ice with a light tonic and a few fresh strawberries, or shake it into a Strawberry Gin Fizz for something brighter.
