Sansibar selected this Teaninich, a 7 year old Highland malt from 2016, drawn from cask 305081 and bottled at 60.2%. The outturn was 314 bottles. Set at Alness in Easter Ross, Teaninich has distilled since 1817. It is the only Scotch malt distillery to mash through a mash filter rather than a mash tun.
It was worked through the distillery's stills from a very clear wort, for the light, grassy, oily make Teaninich is known for. It was matured in refill ex-Bourbon oak, lending honey and vanilla. Younger here, it keeps a clean, grassy freshness over a waxy texture. The slow loss of the angel's share concentrates the grassy, waxy core over time. That ultra clear wort is the source of Teaninich's fragrant, green tea grassiness. Teaninich Castle nearby, once the family seat, is now a hotel and restaurant. Robert Innes Cameron, an Elgin blender, became sole owner in 1904. The Munro family ran the distillery through two generations before selling.
At a full 60.2% it is intense yet fresh. A grassy, waxy freshness sit alongside a quiet vanilla from the refill oak. The texture is light and oily, the grass threaded with honey. Green tea and a soft wax see out the finish. This is the green tea malt of Easter Ross.
