    Single malt Teaninich, an independent Signatory Vintage bottling, a 17 year old from 2007, drawn from cask 3 and bottled at 55.1%. A release of 347 bottles. Teaninich was founded in 1817 by a Napoleonic veteran in the northern Highlands at Alness, and it is rarely seen as a single malt in its own right. It was founded by Blind Captain Hugh Munro, a Napoleonic veteran, on his Teaninich estate.

    The spirit was run from a clear wort through the distillery's tall stills, to build a clean, waxy, grassy character. It was matured in refill ex-Bourbon oak, lending honey and vanilla. Past a decade the grass deepens, the wax and a soft honey building over green fruit. A clean wort and a long ferment build the fragrant, green tea note. A long fermentation builds the fresh, green fruit the blenders prize. A 2013 expansion added a new six still house, more than doubling capacity.

    At cask strength 55.1% it is muscular yet green. A grassy, waxy freshness sit alongside soft vanilla and honey from the cask. The texture is light and oily, the grass threaded with honey. The finish runs fresh, green and oily. This is the green tea malt of Easter Ross.
