This That Boutique-y Rum Company bottling is a single cask Foursquare finished in a Sauternes cask, the dry, additive-free Barbados rum from Richard Seale's St Philip distillery dressed in sweet-wine wood. Bottled additive-free in the honest Boutique-y style at ten years and a full 53.5%, it is a rich, wine-cask-driven take on the house.

The molasses spirit, blended pot and column, shows dried fruit, wood, toffee and vanilla on the nose, then brown sugar, wood, caramel and spice on the palate, with a woody, thick, tannic and dry finish. The Sauternes cask brings dried figs, dates and raisins in abundance, giving it a chewy, sherry-matured feel layered over coconut and warm spice. The wood is assertive and rewards drinkers who enjoy that style, the 53.5% strong but balanced. A characterful, value-minded Foursquare for those who like their Barbados rum dark and fruit-soaked.
