St Nicholas Abbey is the boutique Barbados estate set around a 1658 great house, and unusually its rum is made from cane syrup rather than molasses, crushed on a restored steam mill. This unaged white is bottled overproof at a robust 60 percent and unsweetened, a clear-spirit expression of the estate's distillate.
The nose is sweet, fresh and fruity with a honeyed note, and the palate is full bodied and rich with a naturally sweet, fruit-forward character that comes from the cane base rather than added sugar. Distilled on the estate's pot and column stills, this keeps the grassy, fruity vibrancy of a young white while carrying real weight from its strength.
