Description
Sodade is a Cape Verde producer working in the cane juice tradition, distilling from fresh pressed sugar cane juice in the manner of agricole. As Cape Verde sits outside the French appellations, this is best described as agricole style rather than agricole proper.
This Evora is a single cask aged around four years in ex-Bourbon oak. A few years in cask gives a cane juice rum a first layer of vanilla and light spice over its grassy, peppery core while keeping the spirit relatively fresh. Bottled at 45.5 percent, it should read dry and cane led, an island rum with the herbaceous snap of fresh sugar cane and a modest touch of oak.
