Savanna on Reunion makes agricole, traditional molasses and intensely funky high-ester rum, and this L'Absolu blends its HERR high-ester molasses style with long-aged, dry wood influence, finished with a cognac cask character. Bottled unsweetened at 58%, it trades sweetness for depth and structure, a bold release for drinkers who want power and funk together.
The HERR component brings an estery, overripe-fruit funk, while the extended ageing layers tannin and dry oak around it. The nose shows strawberry, wood, grape and olive, the palate turns woody and dry with strawberry, a cognac-like oak and allspice, and the finish carries strawberry, licorice and tannin. This is more grown-up and roastier than a lighter Savanna, the alcohol well integrated for its strength. A complex, structured pour for experienced palates who enjoy dry, wood-forward Savanna with a thread of HERR funk and cognac influence, and are happy to forgo sweetness for the trade.
