Description
Saint James has been making rum in Martinique since 1765 and is among the island's largest houses, instantly recognisable by its squared bottle. This single cask is a 2003 vintage matured eighteen years, qualifying it well into the AOC Hors d'Age tiers, made from fresh pressed sugarcane juice on a Creole column still in the full agricole tradition.
Nearly two decades of tropical ageing in ex bourbon oak shows in the colour and depth, yet the cask was clearly contained rather than aggressive. The nose offers dried fruit, cocoa and a fresh agricole lift, the palate is oily and heavy with intense cocoa, dark chocolate, cherry and allspice, and the wood never tips into dryness. Bottled unsweetened at a soft 42.3 percent, it drinks as a refined, easy sipper, the kind of mature agricole where cane character and barrel sweetness sit in quiet balance.
