    This official Isle of Raasay single malt from the Sherry Quarter Cask Release and bottled at 52%. 14300 bottles in all. Raasay is the first legal distillery on the Isle of Raasay, a small island in the Inner Hebrides off Skye. R&B Distillers, founded by Bill Dobbie and Alasdair Day, built the distillery from a blank sheet in 2017.

    The spirit was run through the distillery's Italian built pot stills on mineral rich island water, after slow fermentation with a two stage distillers and Champagne yeast. A sherry cask laid raisin and walnut over the bright distillate. Without an age statement, it is fresh, vibrant and cask forward. First fill and virgin casks work quickly on young spirit, so even a few years bring real depth. The six cask recipe of rye, Chinquapin oak and Bordeaux wine is unique in Scotch. Peated and unpeated spirit are matured apart, then married for the flagship malt.

    At cask strength 52% it is muscular. The Oloroso and Pedro Ximenez sherry bring raisin, date, fig and walnut with a clean coastal lift behind. A bramble fruit and a warm spice run through. It closes long, fruity and warm. This is the new wave of Hebridean whisky in a glass.
