A soft Salvadoran molasses rum aged ten years in ex-bourbon barrels, leaning Spanish-style and gently sweet, with creme brulee, vanilla, cocoa and honeyed dried fruit running into tobacco, pepper and a touch of coffee at 43%.
Description
Bottled by Phenomenal Spirits, this Ron Izalco carries ten years of age on Salvadoran molasses rum, finished out at an easy 43%. It sits squarely in the rounded, dessert-leaning Spanish style, the kind of rum built for unhurried sipping rather than statement-making, and it makes a comfortable introduction to aged Central American distillate.
The distillate is column-driven and matured in ex-bourbon wood, which shows in the vanilla, creme brulee and cocoa on the nose. The palate softens into honey, caramel and dried fruit before pipe tobacco and a little chocolate and coffee arrive on the finish. There is a clear thread of sweetness here, in keeping with the style, so this reads as a smooth after-dinner pour rather than a dry, austere sipper. American oak gives it backbone without ever turning sharp.
