Description
The fifth Artesano edition from Mezcal San Cosme is made solely from Cuishe, a member of the karwinskii family that grows wild around Santa Maria Zoquitlan and Miahuatlan in Oaxaca and needs roughly ten to fifteen years to mature. Bottled as a joven at 51%, it leans into the dry, mineral, vegetal signature of the karwinskii magueyes, and continues the San Cosme Artesano series devoted to single wild agaves and their distinct characters.
Production follows the old method the line is built on, the agave hearts harvested by hand, roasted gently in an underground earth oven, milled by hand and traditionally distilled. The pit roast lends a measured smoke, while Cuishe supplies its hallmark stony minerality alongside pronounced vegetal and floral notes. The palate is high in mineral character with restrained smoke and herbal, flowering lift, closing long and balanced as the agave carries through undiluted at full strength.
