Description
Mezan, known for leaving its rums unmessed with, bottled this Diamond as a single cask at 56%, a 2007 distillate from the Savalle metal column still that produces the lightest, cleanest of the Demerara marques. Here that clean spirit has been given a Pedro Ximenez sherry maturation, which pulls it toward a darker, richer register while the rum itself stays unsweetened.
The nose runs woody and nutty with coffee and dried fruit, and the palate brings dark chocolate, dried fruit and caramel with the PX sherry lending depth rather than added sugar. The finish is woody and nutty with espresso and toffee. Savalle Diamond usually shows toffee and bitter chocolate over light wood, and the sherry cask amplifies that dark, roasted side without smoothing the spirit into a liqueur. The texture is oily and the balance holds, classic Guyanese spice meeting sherried dark fruit. An honest, full-strength Demerara that stays serious while remaining approachable.
