J. Bally is a historic Martinique name, and this Paille is a lightly aged agricole distilled from fresh-pressed sugar-cane juice, with at least one well-regarded bottling dating from the 1980s, before the AOC was established. Paille refers to the pale straw colour of a briefly aged rum, the ambre tier between blanc and vieux.
The profile is intriguing and a little untamed, with camphor, papaya, eucalyptus and liquorice on the nose, then melon, mint, tar and floral notes on the palate. It carries the herbal, medicinal edge of an old-school agricole alongside a balanced, faintly sweet vanilla character.
