Description
This official Glenfarclas, a 26 year old, from 1991, cask 163, at 57.6%, 549 bottles in all. Glenfarclas is a Speyside single malt matured almost wholly in sherry casks from Jerez. Its water rises from the granite of Ben Rinnes, above the distillery at Ballindalloch. It was licensed in 1836 under Robert Hay and bought in 1865 by John Grant for 511 pounds.
It was run slowly off the spirit still, for a weighty, nutty spirit the sherry then deepens. It was matured in an Oloroso sherry cask, the wood working deep into the malt. Through the evaporative decades the esters fold into raisin, fig, beeswax and a bittersweet chocolate. The full spirit deepens with time, the cask drawing out its darker register. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate. The full bodied spirit takes active sherry wood well, carrying its dark sugars through the years.
At a natural 57.6% it is full and rich. Baked apple, honey and a dark chocolate, with dried fruit, fig and walnut from the cask. A dark chocolate and a soft oak give it weight. The close is rich and dark, fruit over a warm spice. This is a rich Speyside malt of dried fruit and nut.
