Description
A distillery release of Glenfarclas, a 25 year old, from 1992, cask 2901, at 57.6%, 524 bottles in all. Glenfarclas is a Speyside single malt matured almost wholly in sherry casks from Jerez. Direct firing chars the wash a little, lending the rich, nutty depth Glenfarclas is known for.
Distilled in copper pot stills, building a deep malt of dried fruit and dark sugar. It was fully matured in an Oloroso sherry cask, the wood deep in the rich spirit. At this evaporative stage ellagitannins lend structure while oxidation builds a richer raisin and treacle. The full bodied spirit takes active sherry wood well, carrying its dark sugars through the years. The wood frames the spirit without ever stripping the full Speyside body. The cool, slow dunnage ageing loses little to evaporation, the spirit holding its depth.
Bottled at a cask strength 57.6%, it is deep and concentrated. Baked apple, honey and a dark chocolate, with dried fruit, fig and walnut from the cask. The mouthfeel is full and coating, the fruit dark and sweet. The finish runs long, full and warming. This is Glenfarclas's deep, fruity Speyside style.
