This official Glenfarclas, a 25 year old. Glenfarclas is a richly sherried Speyside single malt, run by the Grant family since 1865. Its six stills are the largest in Speyside and among the very few still fired directly, now by gas. Direct firing chars the wash a little, lending the rich, nutty depth Glenfarclas is known for. Its spirit is matured almost wholly in sherry butts brought up from Jerez. It holds some sixty eight thousand casks on site in dunnage warehouses, with stock from every year since 1953.

The spirit was run slowly off the spirit still, shaping a rich Speyside body with real weight. An ex-Bourbon barrel shaped it, vanillin and a soft coconut under the malt. Through the evaporative decades the esters fold into raisin, fig, beeswax and a bittersweet chocolate. The cool, slow dunnage ageing loses little to evaporation, the spirit holding its depth. The full spirit deepens with time, the cask drawing out its darker register.

It drinks rich, full and sweet. Date, fig and a warm cinnamon, lifted by a sweet oak. A dark chocolate and a soft oak give it weight. It finishes long, full and fruity. This is a rich Speyside malt of dried fruit and nut.
