Matured almost wholly in Oloroso sherry casks from Jerez. A rich, deep Speyside single malt of dried fruit, nut and spice. This is a richly sherried Speyside single malt.

    This official Glenfarclas, a 21 year old, from 1980, at 53%, 574 bottles in all. Glenfarclas is a Speyside single malt, one of the last great family owned distilleries in Scotch. Its slow, cool dunnage maturation loses very little to the angels each year. Its whiskies are bottled at their natural colour, without chill filtration. It holds some sixty eight thousand casks on site in dunnage warehouses, with stock from every year since 1953.

    The spirit was run slowly off the spirit still, for a weighty, nutty spirit the sherry then deepens. It was matured in an Oloroso sherry cask, the wood working deep into the malt. Through oxidative maturity the esters concentrate, the orchard notes turning to raisin, fig and a dark chocolate. The full bodied spirit takes active sherry wood well, carrying its dark sugars through the years.

    Bottled at a cask strength 53%, it is deep and concentrated. Orange, raisin and a treacle edge, with dried fruit, fig and walnut from the cask. A baked apple and a warm cinnamon lift the middle. A deep finish ends on dried fruit and a dark chocolate. This is a rich Speyside malt of dried fruit and nut.
