Billed as Peru's first premium gin, Gin'Ca is distilled in small batches at The Inca Distillery from a sugar-cane spirit rather than the usual grain, which lends it a particular softness and a gentle sweetness. Around the juniper, the makers gather botanicals from across the country and beyond: Peruvian lemon peel, coriander seed, angelica root and cinnamon, drawing on the biodiversity of the Andes and the Amazon for freshness and depth.
The nose is all fresh citrus, juniper and a hint of cinnamon. The palate is soft and even, with clear juniper, bright lime and a quiet spice underneath, closing long and mild with that cane-born sweetness lingering. Serve it in a G&T with fresh lime or grapefruit to draw out the fruit and spice, or let its mildness carry a gentle Negroni.
